I Made Cupcakes!

I shared my carrot cake recipe a few months back and it was nice hear how much you guys love it. This time, I put a little spin on things by making carrot cupcakes. It’s easier to pack for baon or to have as a quick breakfast! You can also have a little fun with it by playing with colored icing. You can watch the vid below to see how I do it. Carrot Cupcakes Recipe

WHAT YOU NEED:

For the cupcakes:

BOWL 1! Dry ingredients:

– 2 cups all-purpose flour

– 2 Tsp baking powder

– 1 1/2 Tsp baking soda

– 3 to 4 Tsp cinnamon powder

– Pinch of salt

BOWL 2! Fruit ingredients:

– 2 cups shredded carrots

– 1/4 cup crushed pineapple

– 1/2 cup raisins (optional)

– 1 cup shredded coconut

– 3/4 cup chopped walnuts

– Juice from 1/2 of a small orange

– Juice from 1/2 of a lemon

BOWL 3! Wet ingredients:

– 2 cups vegetable oil (or coconut oil or canola oil)

– 4 eggs

– 1/2 cup washed sugar or muscovado sugar

– 1 Tbsp organic coconut butter

For the frosting:

– 2 blocks cream cheese

– 1/4 of a butter stick

– 1 Tbsp vanilla extract

– 2 cups powdered sugar

 HOW TO MAKE IT:

For the cupcakes:

1. Mix the dry ingredients in a bowl. Set aside

2. Mix the fruit ingredients in a bowl. Set aside.

3. Mix the wet ingredients in a bowl. Set aside.

4. Slowly mix in the dry ingredients (bowl 1) with the wet ingredients (bowl 3). Then slowly mix in the fruit ingredients (bowl 2).

5. Now you have your cupcake mix together in one bowl!

6. Line a cupcake pan with cupcake holders, then put the mix in.

7. Bake it in the oven for about 25 minutes! Just check on it from time to time cause all ovens are different.

For the frosting:

1. Mix all the ingredients in a bowl.

2. Put the frosting in a piping bag then leave it in the fridge to chill. But not too long cause it might get too hard to use it to frost.

3. You can also play around with food coloring to make different colored icing.

To finish:

1. After baking, cool your cupcakes first for about an hour.

2. Frost, frost, frost!
