I Know What You’re Made Of Cauli-Burger

One of the reasons why I like to cook is I know what exactly goes in my food. Eating out is fun, but let’s be honest, you can’t really know what’s going on inside the kitchen. I wasn’t always OC about what I ate, but as I grew older, the more I realized that what we eat makes a huge impact on our health.

Eating the right food can make you less sick, more energetic, and even help you live a longer life. So if you can stick to healthier ingredients, why not, diba? I also always say that eating healthy is not boring. I still eat meat (hello, I’m married to an Argentinian), but I really like how these cauli-burgers give me the flavor I’m looking for without making me feel bloated or gross after eating it. This recipe is a little longer than the other recipes I’ve posted here before, because everything is made from scratch. Something to try over the weekend, right? Let me know how it goes!

WHAT YOU NEED:

For the patties:

– 1 head cauliflower, chopped into florets

– 3/4 cup cooked quinoa

– 1 cup ground almonds (or bread crumbs)

– 3/4 cup cheddar cheese, shredded

– 3 eggs

– cayenne

– cumin

– chili powder

– all spice

– salt to taste

– a swish of olive oil

For the green sauce:

– 1/2 avocado

– 1 cup parsley and cilantro

– 1 handful of jalapeños, chopped (more or less, depending how spicy you like it)

– 3 cloves of garlic

– 1 lime

– 1 small handful of almonds

– a swish of olive oil

– a swish of water

For the yellow sauce:

1/3 cup Greek yogurt

– 2 roasted bell peppers

– 9 cubes feta cheese

– parsley

– a swish of sherry vinegar

For the ketchup:

– tomato paste

– 3 fresh tomatoes, cut

– 2 Tbsp pinakurat

1 onion, chopped

– cinnamon, to taste

– salt and papper, to taste

– paprika, to taste

– chili powder, to taste

– all spice, to taste

For the coleslaw:

– red and green cabbage, chopped

– olive oil, to taste

– balsamic vinegar, to taste

– lemon, to taste

HOW TO MAKE IT:

For the patties:

1. Add cayenne, cumin, chili powder, and all spice (everything to the taste) on the cauliflower florets. Pop it in the oven until roasted.

2. Put the roasted cauliflower florets in a blender or food processor and “blend” until it looks like rice.

3. In a bowl, mix the cauliflower rice, cooked quinoa, ground almonds, cheddar cheese, eggs, salt, and olive oil. The mixture should hold when molded into patties. If not, you can a little more olive oil.

4. Mold them into patties and cook. The number of patties you can make depends on the size you mold them to. If you have extra ones, you can always freeze them—just like regular burger patties!

For the green sauce:

1. Put all the ingredients in a food processor or blender. Blend.

For the yellow sauce:

1. Put all the ingredients in a food processor or blender. Blend.

For the ketchup:

1. Put all ingredients on a pan and cook on the stove in medium heat.

For the coleslaw:

1. Mix the olive oil, balsamic vinegar, and lemon with the cabbage.

Put everything together like you would a burger. Add bread if you want or don’t! Et voilà, your cauliflower burger!
