I think everyone here has binged on food at least once. Or maybe you do it more than you like? Lol. Most of the time, I think it’s kinda like we set up ourselves to overeat by not eating right throughout the day (or not eating at all) and then we think we can make up for it by having one huge meal right before sleeping, which is not very healthy.

I also don’t have that much time to eat when my schedule is super busy, so what I do is plan ahead and prepare food that will keep me full and energized for a longer time. I avoid anything too sugary or carbs that will just make me crash, and I eat food that has a lot of fiber and protein. Quinoa is seriously the best for this, because it contains a good amount of both. Chicken, of course, is a good source of protein also. So if you want to know what I eat when I need to feel busog, here’s my recipe! You can make this baon for lunch, but like most of my recipes, it can also be bongga enough to serve for friends or family. LOL.

Para Sa Protein Quinoa + Chicken + Kalabasa Recipe

WHAT YOU NEED:

For the quinoa:

– 1 cup red quinoa

– 1 fennel, chopped

– 3 shallots, chopped

– Coriander, chopped

– Thyme, chopped

– Garlic, chopped

– Parsley, chopped

– Almonds, toasted and chopped

– 1 Tbsp butter

– Shredded parmesan

For the kalabasa:

– Kalabasa

– Olive oil

– Balsamic vinegar

For the chicken:

– Chicken breast

– Lime zest

– Mustard

HOW TO MAKE IT:

For the quinoa:

1. Cook 1 cup of red quinoa like you would cook rice.

2. On a frying pan, cook the fennel, shallots, coriander, thyme, and garlic.

3. Mix the fennel, shallots, coriander, thyme, and garlic with the cooked quinoa.

4. Add the chopped parsley and the toasted and chopped almonds. Mix in 1 Tbsp of butter until it’s melted from the heat of the quinoa.

5. Add shredded parmesan. Mix.

For the kalabasa:

1. Slice the kalabasa. Rub it with olive oil and put it in the oven until cooked.

For the chicken:

1. Marinate chicken breast (it’s completely up to you how much) with lime zest and mustard, both to taste.

2. Cook on a pan with slices of lime.

Put everything together:

1. Top the red quinoa with kalabasa. Drizzle with olive oil and balsamic vinegar.

2. Serve sliced chicken breast on a separate plate. Et voilà!
