#SolennCooking: Cabbage “Steak” Recipe

You know how you know you need to eat more veggies, but you just find them gross? Well, here’s a trick: Be creative in cooking your veggies (you can even sneak in a little meat), so it tastes like something you can actually enjoy. Like this Cabbage “Steak” recipe. I used cabbages because they’re rich in vitamin C and fiber (super good for your immunity and digestion), plus they’re low in calories. And I used a bit of bacon because bacon is life. Lol. Try it and let me know what you think!

Cabbage “Steak” Recipe


For the cabbage “steak”:

– 1 green cabbage

– Butter (melted) or olive oil

– Garlic powder

– Salt and pepper

– Grated parmesan

For the Caesar dressing:

– 6 pcs anchovy fillets

– 2 garlic cloves

– Salt and pepper (to taste)

– 2 egg yolks

– 3 Tbsp lemon juice

– 3/4 Tbsp Dijon mustard

– 2 Tbsp olive oil

– 1/2 cup vegetable oil

– 4 Tbsp grated parmesan

For the topping:

– Cooked bacon or bacon slab


For the cabbage “steak”:

1. Remove the outer layer of the cabbage then cut into steak-like pieces.

2. Place “steak” slices on a foil-lined baking pan.

3. In a bowl, mix the melted butter, garlic powder, salt, pepper, and grated parmesan. It’s up to you how much you want to put, depending on your taste.

4. Brush the mixture over the cabbage “steak”. Place the baking pan inside a pre-heated oven. After 20 minutes, turn the slices over, brush the other side, and put it back inside the oven for another 20 to 30 minutes.

For the Caesar dressing:

1. Mash together the anchovy fillets, garlic cloves, salt, and pepper by chopping finely first, then pressing down with the back of a spoon to create pasty mixture.

2. In a small bowl, whisk the egg yolks, lemon juice, and Dijon mustard. You can add more lemon juice depending on your taste.

3. Gradually whisk in the anchovy mixture you just made, and slowly add the olive oil and vegetable oil until you get a thick texture. Add the grated parmesan.

For the topping:

1. Cook bacon and chop finely.

To plate:

1. On a serving plate, put your cabbage “steaks” with a drizzle of Caesar dressing. Top with bacon and more parmesan. Feel free to add croutons for an extra crunch.
